Easter is just a few short days away, and for many people that means they can finally eat sweets again! If that is the case for you, then here are some easy recipes to fulfill you long overdue sweet tooth. In case you are looking to continue eating healthy after Lent, we threw in one of those too.

Apple Cinnamon Dessert

Ingredients:
One apple
¼ c. water
Cinnamon or cinnamon sugar mix
Directions:
Separate the apple and place into a microwave safe bowl. Then add the water, cover and microwave for 2 minutes. When it is done, drain the water and sprinkle the cinnamon on top.

My notes:
This dessert is super easy and can easily be doubled in case you have a huge group and are easy to share. Feel free to add as much cinnamon to the apple as you want; although this will take away from the healthy aspect, it will add more flavor! If you’re looking to keep your healthy eating habits after Lent, this is the perfect solution to the apple a day keeps the doctor away theory!

Microwave cookies (Yes, I’m serious!)

Ingredients:
Favorite homemade cookie dough OR store bought cookie dough
Directions:
Place the dough in small amounts onto a microwave safe plate covered in wax paper. Microwave for 30 seconds to a minute or until they look completely cooked.

My notes: Yes, that’s all it takes! These are the easiest cookies I have ever made! They might not look or taste exactly like Mom’s homemade cookies, but they are pretty close; especially for coming out of the microwave. These will make a perfect late night snack if you can actually get the raw cookie dough cooked instead of eating it first. The website originally says to microwave them for 3 minutes, but I would not suggest this; you might end up with smoking black bricks. These cookies also spread out a lot, so if you want to make a mini cookie cake for someone’s birthday, this is the perfect way!
